Ingredients
- 1/2 cups cornmeal
- 3 Tbsp cornstarch
- 1 Tbsp baking powder
- 1 tsp salt
- 1 1/4 cups flour
- 2 cups Silk Unsweetened or Original soy, almond or coconutmilk
- 1/4 cup oil
- 3-4 Tbsp sugar or honey
Preparation
- Preheat oven to 400°F.
- Mix the dry ingredients together in a large bowl.
- Add Silk, oil and sugar or honey. Mix until thoroughly combined.
- Lightly oil 12 muffin tins and divide batter among them, filling each 3/4 full.
- Bake for 15-18 minutes.
- Serve hot.
