Boulder Corn Muffins

Ingredients

  • 1/2 cups cornmeal
  • 3 Tbsp cornstarch
  • 1 Tbsp baking powder
  • 1 tsp salt
  • 1 1/4 cups flour
  • 2 cups Silk Unsweetened or Original soy, almond or coconutmilk
  • 1/4 cup oil
  • 3-4 Tbsp sugar or honey

Preparation

  • Preheat oven to 400°F.
  • Mix the dry ingredients together in a large bowl.
  • Add Silk, oil and sugar or honey. Mix until thoroughly combined.
  • Lightly oil 12 muffin tins and divide batter among them, filling each 3/4 full.
  • Bake for 15-18 minutes.
  • Serve hot.
