Chocolate Peppermint Brownies

Ingredients

Brownie Layer

  • 1/3 cup canola oil
  • 1/4 cup Silk soy or almondmilk, any flavor
  • 1/2 cup unsweetened cocoa powder
  • 3/4 cup sugar
  • 2 eggs or the equivalent in egg substitute
  • 1 tsp vanilla
  • 2 Tbsp cornstarch
  • 1/2 cup almond flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Mint Layer

  • 1 1/2 cups powdered sugar
  • 3 Tbsp margarine (or butter)
  • 2-3 Tbsp Silk soy or almondmilk, any flavor
  • 1 tsp peppermint extract
  • 2-3 drops green food coloring, if desired

Chocolate Glaze

  • 2 oz unsweetened chocolate
  • 2 Tbsp soy margarine (or butter)

    Fresh bresh in brownie form.

    No one can resist the temptation of freshly baked brownies. How about adding a little twist to the mix with some peppermint? I say "YES PLEASE!". This recipe is one of my favorites, if done right of course. Don't be afraid to pig out before a hot date anymore! Chow down on these guys and freshen up that breathe to impress that special someone in your life.

    Surprisingly Easy

    I went into this thinking it would be a lot of work to make these but they looked so good in the picture I had to give it a try. The ingredients went together quickly and the directions were easy to follow. I admit mine did not look as good as the ones in the picture, but my next batch will be better. Good recipe for a party or just for the family,

    Minty and amazing!

    How could this be bad, no really now, ask yourself? We substituted butter for margarine (because I enjoy butter much more). The end result was amazing, not overpoweringly sweet but incredibly refreshing and satisfying!

    Excellent flavor!

    Made it dairy and egg free with dairy free margarine and an egg substitute. Great flavor! No one could tell Silk was in there! Love cooking with Silk soy milk!

    Loved It !

    Never really been a mint fan but when I tried this I fell in love with it. Sooo much better than the mint oreos I tried. If you love chocolaty brownies with cool minty taste I think this is the recipe for you :D.

    Wonderful!

    It was the easiest, but no where near the hardest recipe, but oh so wonderful when it was done! The mint layer was really easy to make and I can't believe how well these turned out. I let them chill for about 2 1/2 hours, at 1 hour, it seemed like it needed more time. We didn't even have any left by the next morning. Usually we have a few stray brownies, but not this time. It was a big hit with everyone, including my neighbor who we took one to. 7 people were really glad I found this recipe. Smooth mint layer, perfect chocolate brownie layer that was soft, but not crumble soft, just right.

    Free of everything my family is allergic to!

    I rember making there as a tween, but back then I did not have Celiac disease. 40 years later 2 of my daughters have the same and two have lactose intolerance. It is so hard to find something that comes close to the nostalgic taste of food before an allergy takes it away but this recipe does it! I recently made it for my daughters first art show and they flew off the table; many people asked for the recipe. Way to go Silk!

    great for holidays

    these brownies were great. i love serving them for st. patrick's day and for Easter. the brownie is dense and moist. the green is so creamy and the chocolate on top is amazing. All together it is a near perfect dessert.

Chocolate Peppermint Brownies

Preparation

  • Preheat oven to 350°F.
  • Coat an 8-inch square pan with cooking spray.
  • In a large bowl, whisk together oil, Silk, cocoa and sugar until well combined.
  • Add eggs and vanilla and beat until smooth.
  • Add cornstarch, flour, baking powder and salt and mix to combine.
  • Spread into prepared pan and bake 25 minutes. Cool completely.
  • While brownies are cooling, prepare mint layer.
  • Beat powdered sugar and margarine until creamy.
  • Add enough Silk to make frosting spreadable.
  • Stir in peppermint extract and food coloring, if desired.
  • Frost cooled brownies and chill until set, about 15 minutes.
  • Meanwhile, melt chocolate and margarine.
  • Pour chocolate mixture over chilled, frosted brownies.
  • Chill until set, about 1 hour.
  • Cut into squares with a hot, sharp knife to serve. Refrigerate any leftovers.
