  • 3/4 cup sugar
  • 1/4 tsp salt
  • 1/4 cup cornstarch
  • 3 cups Silk soy, almond or coconutmilk, any flavor except Light

    Great!

    This pudding is delicious! Doing a quick calorie calculation, I found it to be closer to 160 calories for 1/8 of the recipe, and I even used a lower calorie milk. Not sure how they came up with 116.

    Even easier, use Silk Chocolate Almond Milk - already has chocolate and is sweet enough! 1/8 tsp salt 1/4 cup Arrowroot Powder 3 cups Silk Chocolate Almond Milk 3 Tbsp Organic Butter 1 Tsp Organic Vanilla Extract Follow the preparation instructions to the original recipe. Enjoy!

    Some ingrediants could have more healthy substitutes

    This is great tasting and pretty, but too many calories and bad fats. I would substitute stevia for sugar, unrefined coconut oil for margarine, and arrowroot for cornstarch.

    Simply Delicious!

    This pudding is simply delicious and so, so easy to make. I used almond milk and substituted Stevia for the sugar and arrowroot for the cornstarch. I also added grated orange peel and sprinkled finely chopped toasted almonds on top. My family loved it!

    So Creamy!

    Love the Pudding! Totally Yummy,....changed out a bit of the vanilla extract and added about 1/4 tsp orange.....OMG so totally yummy.....did it mention that already.....and again...will be making it again and again..even thinking about adding a tad of peppermint extract for the Holidays!

    Exceptional Chocolate Pudding

    Being lactose intolerant with the milk produced pudding recipes, I was very surprised in the richness of the pudding with Silk Almond milk. I also used a sugar substitute in the recipe and ate the flavorable pudding guilt free. I will make this chocolate pudding often. One can really feel like a chef when you make it from scratch and not from a box.

    Decadent Chocolate for 155 calories.

    I am such a chocoholic. Cocoa powder is healthy. I change this recipe a little bit and I get to have 1 full cup of this chocolate delight in a mug, and I eat it warm. I get satisfied with 155 calories, since I do "watch my weight". My change is that I use 1/4 cup of sugar and 1/2 cup of stevia, instead of 3/4 cup sugar. I also skip the butter.. That reduces the calories from 300 for 1 cup to 155 calories.

    I can live again!

    You know how some recipes disappoint? Well this chocolate pudding was a delightful surprise - the taste couldn't have been better, no need to tweak. I did use half the suggested margarine as I was unfamiliar with pudding ingredients. Superb! I am so excited, my husband & family are thrilled and I'm sharing the recipe with my non-vegetarian friends - a great transition food for them too! Thank you Silk!

    WONDERFUL AND SO EASY!

    My favorite pudding, being a chocoholic, although I did make a change and substituted 3 T. Tapioca for the cornstarch. I add all the ingredients according to the recipe, let stand 5 minutes, and cook in a double boiler. So, so easy and delicious!

    Smooth as....

    Pudding has always been a favorite of mine--alas, I had given up the idea of ever being able to indulge again in my quest for cutting calories and fat. When a severe choco-craving hit this weekend, I made this pudding with Silk Chocolate Almond Milk and it just hit the spot. So very delicious, great chocolate taste and smooth as...well, SILK !     I actually used the recipe in the microwave! I left out the margarine and used truvia. My favorite is to use vanilla almond milk. A decadent lo-cal treat for me! and packed with calcium and protein-how can this be wrong???

    I was excited to try this recipe. I used the chocolate almond milk because you just cant get enough chocolate!!!!! we werent able to fully enjoy the pudding though because when i refrigerated it i didnt cover it and it made a gel like skin on the top and i mixed it in thinking it would smooth out and it didnt so it was like eating nasty clump. It did mix smoothly and was fine pouring into the bowl. the pudding was smooth under that weird skin that formed on top. so i guess next time i will cover it while in the fridge and maybe we can get the full taste of it. It is a very easy recipe and my 2 year old even helped.

    An Opportunity!

    Best Comfort Dessert

    Try It You'll Love It!

    I used about 1 T stevia instead of sugar. 1 ripe Avocado replaced the cornstarch & the margarine. Blended all ingredients until smooth. No butter, sugar or cooking!

    Silky and delicious pudding!

    I made this last week...I was in heaven! I made only 2 tiny changes. First, I used arrowroot instead of the cornstarch (I can't have corn). The 2nd change was to use dutch-processed cocoa instead of unsweetened - I was out. The end result was a silky and thoroughly delicious pudding with a wonderful chocolate flavor. I will most definitely make this again!!

    Adding sugar and margarine - unhealthy

    Silk is a healthier alternative so why make pudding and add more sugar and margarine. I am replacing the sugar with about 8 Medjool dates or 3/4 C. and leaving out the margarine. I'll use unsweetened Silk and soak the dates in it overnight while chilling, blend in a blender until smooth and then add it to the cornstarch, cocoa, vanilla and salt in the pan.

    Best Chocolate Pudding Ever!!!

    I made a batch of this pudding on Friday night, by Saturday afternoon it was gone, so I made another batch on Sunday morning. By Sunday night it was gone. (To be fair I am a distance runner and my daughter plays rugby.) I used 1/2 cup sugar instead of the 3/4 cup called for in the recipe. It was so good. It was almost like eating a chocolate pot de creme. Sheer heaven! When I was in high school back in the 80's (and before I was vegan) I made chocolate pudding after school almost everyday and watched Scooby-Doo. I might just pick that habit back up now that I have this kick-a## recipe! Thank you Silk kitchen chefs!

    Healthy option

    I am definitely making this over the weekend. I will be using almond or coconut milk. I have to avoid dairy since I have problems due to having a gluten allergy. I also need to avoid soy due to hypothyroidism. When I read the ingredients in pudding I changed my mind about eating instant. Actually using real butter is very healthy. It is margarine and all the "created" butters that are bad for you.

    Tastiness in a small package!

    This was an easy recipe and I used Splenda instead of sugar. The vanilla Almond milk (no sugar added) along with the Splenda helps me stay on track with my goals and the chocolate smoothness of this recipe is a wonderful treat!

    Thick is good when it comes to pudding!

    A bit one note

    I cut down on the amount of sugar because I BELIEVE the evaporated cane juice I use is sweeter than regular granulated. I think I could have cut down even more. This is tasty but maybe some cinnamon would give it a different dimension? I like the suggestion to add orange zest, too. In the end, it doesn't have the depth of flavor that my avocado chocolate mousse has.

    I made it better

    The first time I made this, I went by the recipe with no variation. The second time, I added cinnamon and a dash of nutmeg. Makes a lot of difference and gives it a more complex flavor. I've found that the texture is better if it's stirred well after being chilled. Takes away that "Jello" type feel.

    Nuts For Coconut

    Smooth and creamy. I used the coconut milk. Topped the pudding with whipped cream with toasted coconut mixed in it. A cherry on top of the cream. Looks so fancy but easy to make.

    Even better than the original

    Made two little boys very happy!

    My boys have Galactosemia so there's really no pudding I can buy pre made in the stores. We love all things Silk and I wanted a little something special for my son when he went in for surgery.     Awesome pudding!!

    The only thing I would HIGHLY recommend to be added to this recipe is that instead of cooking it in a saucepan, this needs to be cooked in a double-boiler. My grandmothers both made pudding quite regularly and a double-boiler ensures that unless you leave this unattended or for way too long, this is not going to scorch on the bottom. This applies to whether you make pudding with milk or soy/almond milk. Plus, I think cooking pudding in a double-boiler gives it a smoother texture as it's not directly over the heat and the hot water bath below the cooking pudding ensures that it's going to cook evenly.     Variety styles to enjoy it!

    This recipe is exceptionally delicious with numerous styles of serving. I may put in as topping on my bread pudding or sorbet; as filling in my flaky crust or mini tarts; as frosting to my cheesecake or even enjoy it just like that.

    excellent w/ sliced frozen bananas!

    Turned out incredible using Silk Organic Unsweetened Soy Milk, add frozen sliced bananas or top with slivered almonds for a healthy dessert.

    Chocolate Pudding with Unsweetened Vanilla Almond Milk

    I used the Unsweetened Vanilla Almond Milk for this recipe, and my kids LOVED IT! I have a preference for not TOO sweet desserts, and this is perfect for my family. I also use organic sugar and organic cornstarch. The pudding is smooth, creamy, and even though I made it with vanilla almond milk, very chocolatey. The best thing about this pudding is that no eggs are necessary, making it a low cholesterol, low fat alternative. I'd rather splurge on a little dollop of fresh, homemade, whipped cream made from organic cream. All in all, a very satisfying, easy to make treat that my family loves!

    YUMMMMMMMY

    I just made this. I made this friendly for the program I'm using to lose weight. I substituted evaporated cane juice for white sugar & arrow root powder for cornstarch. I didn't cook it as long due to the arrow root breaking down faster in heat. It turned out wonderful! I have 8 cups to treat myself to when I have a chocolate attack! It's wonderful!!!

    Yum!

    Tastes like original dairy pudding!

    I thought I'd make a pudding when I'm craving something sweet and found this recipe here relatively easy to follow! I'm trying to abstain from Dairy products and found the "ready made" pudding mixes won't set when you use Soy, Almond, or Coconut Milk. Not this recipe. This is awesome, thank you for this recipe. I've found an old favorite with a new twist.

    Pudding mixes aren't vegetarian, and they won't set unless you use regular dairy milk. This one is vegan and tastes 100x better!

    The child who will not eat, eats this!

    Most 1 year olds love trying table foods, but not mine; most also drink Milk, not mine. He's a puree only, dairy free, spoon fed guy, which can get quite boring. I was happy to find a tasty treat that I could make with the Almond/coconut blend that he survives on. Its quick, easy, delicious, and baby and mommy approved!

Preparation

  • Combine the cocoa, sugar, salt and cornstarch in a saucepan and mix well.
  • Slowly add the Silk, whisking constantly to prevent lumps. Bring this mixture to a boil over medium heat while whisking constantly.
  • Lower the heat to a simmer, cover and simmer gently for 8-10 minutes, until pudding begins to thicken. 
  • Remove from the heat and whisk in the margarine (or butter) and vanilla.
  • Pour into 1 large bowl or 8 small serving bowls and refrigerate for at least an hour until thoroughly chilled.
