Ingredients

  • 1 cup Silk soymilk, almondmilk, coconutmilk or Almond Coconut Blend
  • 1 1/2 cups oatmeal, divided (quick or old-fashioned)
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 2 eggs, beaten
  • 1 container Silk Vanilla Soy Fruity & Creamy
  • 1/2 cup fresh or frozen blueberries, raspberries or sliced bananas

    Great in training recipe

    I am a vegetarian runner training for my first full marathon. Healthy, recipes that also support my training needs are very important to me. I love pancakes, and this recipe hits on all cylinders! Great use of whole grains (oats) fresh fruit, and love being able to make them with silk coconut milk- a definite winner that will, hopefully, help me win too!

    My sweet little 1 year old son, who is allergic to dairy and soy just loves these, His big brother and sister enjoy them to.. Very easy to make with little preparation.. They smell and tastes great. I have recommended them to my family and friends..

    Very Tasty--Also Makes Great Waffles!

    I've tried this recipe, and it is so easy to make. Our family likes it on the weekends, but we use it in the waffle maker for delicious, healthy waffles. We like to use the Silk Unsweetened Vanilla Almond Milk to keep the recipe low on sugar. Very tasty--you won't be disappointed in this one!

    I love this recipe because of the fruit in it and also because its made with oatmeal and not flour my daughter has celiac disease on top of being lactose intolerant so I eat what she does but im also lactose intolerant. This recipe made our day

    Delicious, especially with added almond flour!

    I added 1/4 cup of almond flour and the flavor and texture were even better! The added protein is a great plus, too! I simply added it to the recipe without taking anything out or changing anything else.

    So moist!

    The creaminess of almondmilk keeps my pancakes so moist! Love it! I usually add in 1 scoop of protein powder and these guys will keep me full all morning!

    Wonderful

    The cakes come out very fluffy, I grind my oatmeal in a nutribullet and it comes out perfect, I also tried adding some greek yogurt for more protein and that worked well. Something else to try is adding some sweet potato puree.

    finally a pancake for the entire family!

    I learned about my gluten sensitivity a few months ago. man did I miss pancakes! I tried all the gluten free pancakes mixes and I couldn't get my husband or daughter to eat any of them. I had honestly given up on the hope of ever having a pancake again. while browsing the site last week I stumbled upon this recipe. I got a glimmer of hope back. I finally got the guts to make them this morning and they were delicious! my husband and daughter both had seconds! family breakfasts just got a whole lot better thanks to silk!

    My children and I are pancake lovers. We also love oatmeal. But 2 in 1 is just perfection to our breakfast. The children really enjoyed this recipe, of course they helped to mix it. What I loved about it is that it was very moist yet with a nice consistency. we also added some fresh blueberries and of course a glass of milk.

    Amazing for a Gluten Free Pancake Option

    This recipe sounds super cool. With GF oats - its a simple alternative to those pre made pancake mixes. Never new Silk had soy yogurts. Gonna check those out too.

    Simply Delicious

    Being on a medically-defined gluten and dairy-free diet, it is difficult to find good pancake recipes that don't require ingredients I do not have on hand. I found this recipe to be easy to prepare using on-hand products and simply delicious.

    Incredibly Delicious & Guilt Free

    These pancakes are yummy and very low in Weight Watchers Points Plus at only 1 POINT per pancake! They are lighter and airier than regular pancakes and contain more fiber and cholesterol-lowering power because of the oatmeal. This is a wonderful way to have your pancakes and eat them, too! This is the only kind of pancakes that we serve in our house and everybody LOVES them!

Oatmeal Pancakes

Preparation

  • Bring Silk to a simmer in a saucepan over medium heat. Remove from heat and add 3/4 cup oatmeal. Stir and let sit for 10 minutes.
  • Meanwhile, grind remaining 3/4 cup oats in a blender or processor until fine.
  • Combine ground oats, baking powder and cinnamon in a bowl. Add Silk mixture, eggs and Fruity & Creamy, mixing to combine.
  • NOTE: If batter is too thick to pour, thin it out with additional Silk.
  • Fold in fruit.
  • Pour by 1/4 cup onto hot griddle. Cook until nicely browned on each side.
  • Serve with maple syrup, fresh fruit or additional Fruity & Creamy.
