Ingredients

Crust

  • 3/4 cup chocolate wafer crumbs, about 10 wafers
  • 2 Tbsp margarine (or butter), melted

Cheesecake Filling

  • 1/2 cup Silk Chocolate Soy or Almondmilk
  • 2 Tbsp unsweetened cocoa powder
  • 1 Tbsp instant espresso powder
  • 3 Tbsp cornstarch
  • 2/3 cup sugar
  • 8 oz non-dairy cream cheese
  • 12 oz firm silken tofu
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • Fresh berries, if desired

    A Must Have Recipe!

    Oh my gosh. These were soo delicious. Smooth, creamy and the perfect balance of chocolate to espresso. PLUS they are a snap to put together. I highly recommend this recipe.

    Heaven

    This was one of the best cheesecake recipe I have ever tried. The chocolate flavor was just right and when I added fresh strawberries it was pure heaven. The rich and smooth taste of the cheesecake with the flavor of expresso and chocolate can not be beat.

    Yummy... but has casein

    This is a Yummy looking recipe... and it looks very easy. But it uses real Cheese, which has casein. The reason I drink Silk is that it is great for those of us who are lactose intolerant AND great for those of us who want to avoid cancer (see "China Study"). Plus Silk products ALL taste great. So, for me, any recipe that requires real milk products defeats my main reason for using Silk. BUT it does look Yummy! So I give it 3 stars.

    Needs eggs

    My cheesecakes would not set up properly. We had to eat them as a mousse instead. There are no eggs in this recipe, and the cornstarch was not enough to set up a normal cheesecake.

    Cut the sugar for improved health.

    Would be great to substitute Stevia, or another natural low glycemic sweetener for the sugar.

    Perfect for large crowd

    I was stumped as to what to make for dessert for a large crowd & I came upon these. They are the perfect size after a huge meal & were so fast and easy to make. Smooth, delicious and this is a keeper!!!

    Satisfy my craving

    I don't like cheesecake usually but love this version. It is light and smooth mixed with silken tofu and cocoa and espresso powder give a punch to enjoy it. This is a good recipe I want something healthy to indulge on.

    Great with Silk Coconut Milk very creamy!

    I always purchase Silk Coconut Milk original or unsweetened. I tried this recipe with Silk unsweetened coconut milk and it was fantastic! Really smooth and creamy, just delicious. Thanks!

    Creamy yumminess. You don't feel like you're sabotaging a diet with these one mouthful poppers. The espresso balances out the sweetness.

    Gluten free version

    All I can say is YUMMY!!! For those of you out there that need to eat gluten free like me, Glutino makes a yummy chocolate sandwich cookie (think Orea). Crush up the cookie part (minus the frosting) and you have the perfect thing to substitute for the chocolate wafer crumbs the recipe calls for...happy gluten free eating everyone :)

Espresso Chocolate Cheesecakes

Preparation

  • Prepare crust
  • Preheat oven to 350°F.
  • Line a 12-cup muffin pan with paper muffin cups.
  • In a small bowl, combine chocolate wafer crumbs and melted margarine (or butter).
  • Divide crumbs evenly between muffin cups (about 1 Tbsp per cup) and firmly press crumbs into bottom of each.
  • Bake for 10 minutes and then cool.
  • Prepare filling
  • In a small saucepan, heat Silk to a simmer.
  • Remove from heat and whisk in cocoa powder, espresso powder, cornstarch and sugar until smooth.
  • Place cream cheese and silken tofu in a blender or food processor and blend until smooth. 
  • Add chocolate mixture, salt, vanilla and almond extract, and process until smooth.
  • Assemble and bake
  • Divide filling mixture between muffin cups, filling each cup to the top.
  • Bake for 15-20 minutes until filling is set around the edges and slightly jiggly in the center.
  • Cool. Cheesecakes can be covered and stored in the refrigerator for 2-3 days.
  • Serve with fresh berries, if desired.
