Ingredients

  • 1 cup unbleached all-purpose flour or whole wheat pastry flour
  • 1-2 Tbsp sugar or honey
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup Silk Almondmilk, any flavor but Chocolate
  • 2 Tbsp canola oil or melted butter
  • 1 egg

    Love it! Changed a couple things though.

    I thought these pancakes were great, however, I am a Vegan and I do not consume eggs. I used Energy-G egg substitute, it tastes about the same and doesn't affect the texture. Also, I added a teaspoon of Vanilla.

    Excellent

    I followed the recipe exactly and they came out excellent—nice, light and fluffy! It only made about five medium‑sized pancakes, so you may have to scale the recipe if you have a lot of mouths to fill.

    delicious pancakes!

    Most delicious recipe for whole wheat pancakes! I used egg substitute instead of an egg. The consistency of the pancakes was moist and the almond milk adds a nice flavor to the pancake!

    NICE 'N FLUFFY!!!

    OMG, It turned out so fluffy and moist inside! I am trying to achieve a healthy life style and got cow milk out of my life. So I have tried making all natural mixed pancakes and pancakes from scratch using almond milk before, but it somehow always turned out rubbery, hard and thin but saggy inside like it didn't cook through. It was so depressing and I almost went back to cow milk honestly. So when I made this time, I was taken by surprise! I don't think I ever made pancakes this good in my life and it was simply AMAZING!! . lol. Well, I altered the recipe a little, so here is the ingredients if are interested! - 1 cup Organic whole wheat (shift well) - 1 Tbsp Panela (Brown Sugar) - 1 Tbsp Organic cane sugar - 1 1/2 tsp Aluminum-free baking powder - 1/2 tsp baking soda - 1 cup Silk unsweetened almond milk (vanilla) - 2 Tbsp Organic extra verging olive oil - 1 Organic large egg - 1 Big organic banana, mashed thoroughly - 1 tsp Organic cinnamon powder - 1 pinch of Nutmeg, freshly grated - A drop of Organic Vanilla extract Measurements of spices are not exact as I never measure them. You can adjust them to satisfy your own taste buds! Also, I only used one mashed banana because I just wanted to give a hint of banana flavor :-D Well I found a recipe for the pumpkin pancake so I am planning to incorporated it with this recipe next time! It will be perfect for nice sunday breakfast as autumn is almost here. I am just sooooo excited as I can make healthier version of pancakes worth eating using almond milk! I am so happy!.... and so is my husband:-D

    Great breakfast

    I make up a batch of this at the beginning of every week. I double all the ingredients listed here, leave out the sugar/honey and melted butter and add 3 T of egg whites as well. Oh, and I leave out the salt. I figure the syrup supplies the sweetness I need and the butter I use on top is better than having it in the mixture.

    Yum!

    I made these using vanilla almond milk and added chocolate chips. They turned out moist and fluffy. I also smeared peanut butter on top which really took them over the top. :)

    Great texture! But needs a little something

    Great texture! In fact, I had more success with these with these than I have with any other pancake recipe in the past (i.e., didn't burn, turned out fluffy...). But these have no buttermilk, so they need a little something to add flavor. Next time I'll try a little almond extract or coconut extract. Chocolate chips are a good idea, as long as you can have a little milk.

    AMAZING!!!

    I have to say that this is the best pancake recipe ever! We didn't know how using almond milk instead of regular milk would turn out but... oh my goodness was it fantastic. The best was that it's GMO free and yet another way we don't have to use reg milk which we recently cut out of our diet. Thank you to silk for this amazing recipe can't wait to try more :)Also thank you for going GMO FREE!!

    My daughter made these for me. She added a tsp of vanilla and blueberries. They came out delicious and they were easy to make.

    Perfect Sunday Morning Breakfast

    I began making almond pancakes a couple of months ago. Ever since then, I make almond pancakes with Silk Almond Milk every Sunday morning at the insistence of my family (including myself). I sometimes experiment with different flour, but the recipe is flawless. Great pancakes every time!

    Best Pancakes Ever!

    I love this recipe. I use Silk Vanilla Soy Milk and I can eat them plain. No syrup required. The added sweetness of the Silk makes it just right. They taste better than pancakes with regular milk.

    Fantastic! My kids loved them!

    I made these pancakes for my kids and they absolutely loved how light and fluffy they were. They turned out to be wonderful. I am about to make them again right now! I also love that the recipe specifically uses almond milk.

    Great for the pd dialysis patient

    These pancakes are delicious. I had been craving pancakes and cannot use dairy products. These are better than any other pancakes that I have made. I substituted cream of tartar and baking soda as baking powder has too much phosphorus. We have these pancakes once a week. I am sharing this recipe with my pd dialysis center. Thank you! Great recipe....so fluffy and tasty.

    Unbelievably Delicious

    I was hesitant to make this recipe but glad I did. They were great and the most important my daughter loved them. I sifted the dry ingredients, used 1 tbs of sugar added 1/4 tsp cinnamon and a pinch of nutmeg. I added 1 tbs. of honey with wet ingredients. To be honest, I don't think it's necessary to alter the recipe at all, so if you don't have extras in pantry, don't run to the store. This recipe is will work for any pancake lover.

    Great!!

    I honestly wasn't expecting much from almond milk pancakes. I actually made these for my son who can't have dairy, and then I made "regular" pancakes for the rest of our family. HOWEVER, we all tried the almond milk ones, and everyone loved them! A couple of us even liked these more than the regular pancakes. They were great. We didn't change anything at all about the recipe. We used half white flour, and half whole wheat pastry flour. I also used canola oil since he can't have butter. They were nice and fluffy!

    Amazing. Better than Original

    These taste better than my original dairy based pancake recipe. I can handle butter, so used butter for the oil and used butter in the pan. I made them for breakfast on Saturday and made them a week later on Friday night for dinner. I'll be sharing this recipe.

    Delicious!

    I was hesitant to use almond milk in place of regular milk for pancakes and now I can say I am SO GLAD I tried it. I ended up with super delicious, filling, healthy pancakes! I added oats, sliced bananas, and a little almond extract to mine - just perfect!

    If you're into bitterness this one is for you

    We've been cooking pancakes with a "family" recipe for years now. This AM I thought I'd avoid using whole milk or buttermilk & try the Silk we have in the fridge. The recipe was easy enough. I used honey instead of sugar. The first pancake flipping experience was less than stellar. Needless to say that one looked like I'd never set foot in a kitchen & was attempting to cook with my feet. The mix, followed to the letter, was thin & lacked "sticking" power. I let the pancakes cook a little longer than I normally would so the remaining uncooked batter on top wouldn't slide off into the abyss of a hot pan nowhere near the targeted "flip zone". My girlfriend tried the first one & mentioned a bitterness to which I tasted a small bite & noticed something unique but not obvious. After sitting at the table to consume the beautiful stack I had adorned with my favorite maple syrup I took one bite & wondered what in the world I had concocted. Had I created the first-ever cyanide pancakes? Would I survive the 2nd bite or would I get the look of a German spy in a WW2 movie who had just taken his "you'll-never-get-the-info-out-of-me" pill & killed over. Well, if you're into the whole historical re-enactment of WW2 over breakfast sort of thing, cook up a batch of these, dress in your favorite period garb, & you, too, can pretend to be Eva Braun avoiding capture.

Preparation

  • Whisk together flour, sugar, baking powder and salt in a small bowl.
  • In a separate bowl, whisk together Silk, oil and egg.
  • Add flour mixture to egg mixture and stir just to moisten—a few lumps are fine.
  • Cook pancakes on a griddle over medium heat.
  • Serve immediately.
