    It tastes as good as it sounds. I don't really cook with silk products but I have to say, they have really made this recipe well and the taste is so amazing, you won't regret making this!

    Healthy Treat

    We made a few of these and they taste Amazing! The first batch was made as above the others we mixed it up a little by substituting/mixing with pear & blackberry. Add protein powder for some muscle but add a little more milk as needed. Enjoy!

    Amazing, fit and healthy meal

    Oatmeal breakfast is always the to- go breakfast especially when I was prepping for my first fitness competition.     High fiber content and it even tastes good! :)

    Ditch the Eggs along with the Dairy . . .

    I would love to see Silk promoting more VEGAN recipes, since many of us buy these plant milks in an effort to ditch dairy and help lessen the inhumane cruelty inflicted upon dairy cows, as well as laying hens with the eggs. You do not need eggs to bake or create other recipes. There are at least a dozen ways to sub for eggs, including ground flaxseed, which is what I used in this recipe. If you're going to promote non-dairy, do the animals a favor and stop posting recipes that call for dairy and eggs . . . two of the worst factory farm abusers in the industry are the dairy and egg farmers. :(

    Simply amazing and delicious!

    The Blueberry Oatmeal bake is delicious. I love adding fresh blueberries (and sometimes other fresh fruits like strawberries) and it is simply amazing. My daughter and I love the taste. We do not add the walnuts because she can't chew them at this time.

    Perfect Post Workout Snack

    This recipe is awesome! No refined sugar, good carbs, good fats, and a little protein! I made this mixture the night before and let it rest in the fridge overnight. They turned out great! I added just a pinch of salt to bring out the sweetness. It works with cashew or coconut milk just as well!

    nutritious and easy

    I have always been a fan of oatmeal, but never just plain. Adding this that and the other. Amish Oatmeal is another wonderful fast breakfast/any meal or healthy filling meal. This meets all my needs. Taste, easy, and yummy

    Health Benefits and Yummy

    I used an egg substitute (ground flax), wild blueberries which are smaller (flavor and size go further in a recipe), and added cinnamon. I love the walnuts, which lends health benefits in addition to the oats and fruit. A go-to favorite breakfast or brunch. This recipe is delicious!

    Yummy and Healthy

    This is a very good recipe. I recommend the walnuts being added. It provides fruit, nuts, calcium and grains for a very energetic, healthy start to my day. Breakfast is the most important meal of the day so why not make it yummy and healthy.

    Happier Oatmeal Bake

    Blue is often sad, red is often happy. So, I substituted my homemade whole-berry cranberry relish for the blueberries and used sweetened Almond Milk and pecan pieces in lieu of the walnuts. Simple to make, easy to cook, and very pleasurable to eat. A Great Day begins with a Great Breakfast!! This recipe will get you there!!

    Love at First Bite

    Once I read the recipe and realized I had all of the ingredients on hand, I made the recipe instantly and fell in love. It was just as good as I hoped it would be! The only tweak I made was adding some cinnamon. DEFINITELY recommend it.

    OH NO! No Bluberry Oatmeal Bake

    After reading the recipe I had to try it, however I had no blueberries. No worries, I used raisins instead. I doubled the recipe knowing that I would need more because it sounds so delicious. Before serving I sprinkled a bit of cinnamon on top and WOW it just took it to the next level of great taste!!

    Healthy and Tasty!

    We love oatmeal for breakfast, and this recipe really hit the spot! I've made it the night before, and put it in the refrigerator. When I get up the next morning, I pop it in the oven, and go get ready for the day. By the time I'm finished, it's ready to eat.... Yum!

    Better for you breakfast!

    So much better & healthier than many breakfast options ... I thought this recipe sounded good, but I was surprised to find that it tastes even better than it sounds! I have made this both in the oven and in the microwave (as others suggested previously). While I prefer the oven method, the microwave is a decent alternative if you are short on time.

    Kid Approved!

    This is such a great recipe for kids as well as adults! I made it for my 4 year old son and 2 year old daughter... they both loved it! Which is amazing cause they are a tough crowd lol. I love the fact that I can get great fruit, nuts, berries, protein and calcium for them all in one dish. Plus now they both think it's a special treat!

    If You Love Oats...

    Then you'll love this. I personally don't like walnuts so I leave them out. I have added other fruit like strawberries, peaches, and coconut! All are really good!

    Don't have to think twice!

    This recipe is the PERFECT addition to my early mornings! It is easy and super healthy! I have not been a big fan of oatmeal because of the fact that is quite tasteless without a lot of sugar. This recipe completely changed my mind! It is the opposite of tasteless! The fruits and nuts give it a great consistency and the Silk Unsweetened almond milk makes it all the more delicious! Love it!!!!!!

    My daughter loved this

    I was struggling to find another healthy, dairy-free breakfast option for my toddler and this did the trick. We made the recipe as it is written but put it in a muffin tin instead so we can grab and go as we run errands. It's worth a try!

    Almond milk and oats very yummy

    I love using silk almond milk first and mostly because I am l lactose intolerant. Then it cooks better not foaming over like milk does. This recipe is so good I have it for desert.

    So good, easy in the microwave to!

    If you have time to bake for 30 minutes it is wonderful. But if you leave out the egg and baking powder and zap it in the microwave for 2 minutes it is quick easy and SO GOOD!

    AMAZING!!

    What an easy way to prepare a healthy and delicious breakfast. Luckily I have all the ingredients, except for the blueberries. I tired it (using microwave) which worked perfectly. Then when I tried it again with blueberries and blackberries, it was heavenly!

    Almost...

    As a longtime opponent of blueberries, just the title of this dessert made me writhe. I do appreciate that so many fruits are included in a dessert, but the blue stuff doesn't work for me. Perhaps an alternate berry would work. And I'd love it, too, if the recipe was completely vegan. Minus the egg, and we'd be there.

    Children Friendly

    I want my children to have a good and wholesome breakfast each morning before heading to school. Unfortunately that is a challenge as both are such picky eaters. I tried this recipe and not only do they actually ask for breakfast now but have also asked for seconds!

    HEALTHY NEVER TASTED BETTER

    Simply LOVED it! It isn't necessary spending hours in the kitchen, this is a fast, and delicious recipe that can be done in even less than 45 minutes. It tasted nearly good as heaven.

    Awesome healthy snack that I didnt feel guilty eating at breakfast. I had already tried this recipe at the suggestion of another friend. I added a couple of spoons of Agave nectar which made it better than those high fat high calorie blueberry muffins !

    Easy to make and tastes great!

    I don't use dairy products so breakfast is somewhat of a challenge. This is a great non-dairy recipe for breakfast or just for snacking. I used sliced almonds instead of walnuts and added some ground flax seed to this recipe and it came out perfect! It's a very versatile recipe. I'm sure you could use whatever berries or nuts you want and still have a great oatmeal bake!

    Soooo good. Perfect for cold mornings. I added a whole egg to retain some of the nutrients instead of just the white and it was perfect! Also threw in some ground flax seeds :)

    Perfect breakfast 3 ways

    Love this on the stovetop, love it microwaved, love it baked! I always make extra of the mixture and cook some in the microwave/or stovetop and bake then freeze the rest. PERFECT for on the go breakfasts.

Blueberry Oatmeal Bake

Preparation

  • Preheat oven to 350°F and spray a small ramekin or oven-safe glass bowl with nonstick cooking spray.
  • In a medium-sized bowl, mash the banana with a fork. 
  • Add almondmilk and egg white and mix.
  • Next, add the rolled oats, baking powder, blueberries and walnuts and mix again.
  • Transfer mixture into the ramekin and bake for about 30 minutes or until the middle becomes firm and does not jiggle when you shake it back and forth.
