Ingredients

  • 1 1/2 cups cornmeal
  • 3 Tbsp cornstarch
  • 1 Tbsp baking powder
  • 1 tsp salt
  • 1 1/4 cups flour
  • 2 cups Silk Unsweetened or Original Soy, Almond or Coconutmilk
  • 1/4 cup oil
  • 3-4 Tbsp sugar or honey 
  • 1 can sweet corn, drained

    Missing Ingredient

    These corn muffins are very simple and quick to make and taste great too. They went well with the chicken dinner I prepare every Wednesday. I feel there is a missing ingedient, however, which I added to my muffins and it actually looks like it was included in the muffins pictured here - "corn!" I used a can of drained whole kernel corn, but frozen corn could be added too. I think the corn really does the trick in making these muffins "bolder."

    HUGE mistake

    The recipe should read 1 1/2c. corn meal, NOT 1/2c. I made this, it looked wrong, and I had to throw it away, trusting the recipe was correct. It's not. Oh well. Live and learn. They ARE very good, but only if you use more corn meal in the batter. Enjoy.

    Surprising good!

    I only tried this because I was actually out of regular milk! But I was pleasantly surprised with the result. They are super simple to make, and my kids really liked them. (I left out the corn because my kids never would have trusted me again!) Thanks for the idea!

    Scrumptious!

    I made these muffins last night to have along side of my chili dish & they were so yummy! Looking forward to trying more of your recipes!!

Boulder Corn Muffins

Preparation

  • Preheat oven to 400°F.
  • Mix the dry ingredients together in a large bowl.
  • Add Silk, oil and sugar or honey. Mix until thoroughly combined. Fold in corn.
  • Lightly oil 12 muffin tins and divide batter among them, filling each 3/4 full.
  • Bake for 15-18 minutes.
  • Serve hot.
