Ingredients

  • 1 pound Brussels sprouts, trimmed and halved
  • 2 slices bacon or veggie bacon, diced
  • 1 shallot, minced
  • 1 Tbsp margarine (or butter)
  • 1/2 tsp salt
  • 1/2 tsp freshly ground pepper
  • 2 Tbsp flour
  • 1 cup Silk Unsweetened Cashewmilk
  • Pinch of red pepper flakes, optional
  • 1/2 cup shredded Gruyere, Manchego or non-dairy cheddar cheese
  • 1/2 cup panko bread crumbs
  • 2 tsp melted margarine (or butter)
  • 1/4 cup grated Parmesan or non-dairy Parmesan

    AH-MAZ-ING!

    I veganized this (veggie bacon, veggie margarine) so easy since Silk Cashewmilk is so creamy and rich and already vegan. For anyone who thinks they don't like Brussels sprouts, it is because you haven't had them in this dish. Unbelievable! Make it for Thanksgiving, for any dinner party. Your friends will love you. :)

    Delicious!

    Believe it or not, my children LOVE Brussels Sprouts! I'm always looking for new ways to make them as we eat them so often. This was a family hit, and we will definitely be having it again!

    Try It!

    I have always liked Brussels sprouts with cheese sauce. This is much, much better. I think it's a great way to introduce people to Brussels sprouts AND Silk! It's worth trying.

    Yummy

    I too "vegan-ised" this. It was delicious! I don't eat many of my husband's vegan dishes and even the kids ate this one without realizing it was vegan. I tried this with broccoli also, it was just as good! I thought I made enough for lunch leftovers, but it was all eaten at dinner!

    FANTASTIC!

    I am a vegan, and using the replacements for animal products made this meal absolutely wonderful! I will definitely keep this one in the books.

    Oh so good.

    This is the best recipe I've tried for Brussel sprouts. I can see this replacing the green beens for the Thanksgiving meal.

Brussels Sprouts Gratin

Preparation

  • Preheat oven to 400°F. Lightly grease a 4-cup baking dish.
  • Place Brussels sprouts in a pot of boiling, salted water. Return to a boil, reduce heat and simmer until sprouts are tender, about 8 minutes. Drain.
  • In a saucepan, sauté bacon, shallot and margarine until bacon is cooked and shallot is soft.
  • Add salt, pepper and flour. Cook for 2 minutes, stirring occasionally.
  • Add Silk and simmer for 3-5 minutes, until mixture thickens.
  • Remove from heat and stir in red pepper flakes, cheese and Brussels sprouts.
  • Spoon into prepared baking dish.
  • In a separate bowl, combine bread crumbs, melted margarine and Parmesan. Sprinkle over sprouts and bake for 20-25 minutes, until bread crumbs are lightly browned and gratin is bubbling.
