Ingredients

  • 1 Tbsp margarine, butter or coconut oil
  • 4 ripe bananas
  • 1/2 cup packed brown sugar or coconut sugar
  • 2 cups Silk Original or Unsweetened Cashewmilk
  • 1 tsp vanilla extract
  • 3/4 cup mini chocolate chips or toasted pecans, optional

    Creamy deliciousness

    This ice cream was so good, being vegan it's hard to find good ice cream and this hit the spot just right! It was so creamy and my kids loved it! You can also adjust the sugar more or less to your liking.

    Caramelized Banana Ice Cream

    I do not like cashews. Can you substitute almond milk for the cashew milk in the Caramelized Banana Ice Cream? I cannot eat ice cream (made with milk) and would love to have this ice cream. Also, would like the plain vanilla or chocolate ice cream recipes.

    Ok, so I changed it a little..

    Ok, I admit I changed the recipe a bit - I don't have an ice cream maker, so I improvised. Basically, I caramelized the bananas as the recipe dictates using coconut sugar and coconut oil (and a pinch each of cinnamon and salt), but then I FROZE the caramelized bananas. After they were frozen, (I just did overnight) I threw them into my food processor with the Silk, vanilla and mini chocolate chips, processed until smooth and creamy like soft serve. DELISH!!!!!

    Great recipe for no-milk ice cream lovers

    Flavor combination is nice. Tried without an ice cream machine and it came out ok, but would probably taste more churned from an ice cream machine

    Heaven

    This ice cream is absolutely amazing! I used the Silk Unsweetened cashew milk for this recipe (very creamy texture) and substituted the brown sugar for truvia. It came out so amazing. My dad who recently had quadruple bypass surgery thought he would never be able to eat ice cream again but was even able to enjoy this nutritious and delicious dessert. Thank you Silk!

    Smooth, creamy and delicious!

    I made this the instant I saw it posted on Facebook! Easy to make and soooo good. Better than anything I've bought at the store. My ice cream maker took forever to get cold so I just popped it into the freezer and an hour later I had the best ice cream ever! Thank you Silk!

Caramelized Banana Ice Cream

Preparation

  • Melt margarine in a large nonstick sauté pan over medium heat.
  • Peel and cut bananas lengthwise.
  • Place bananas, cut side down, in hot pan and sear for 1 minute. Turn bananas over and sear the other side.
  • Cook for another 5 minutes, stirring (bananas will start to fall apart).
  • Add brown sugar and cook until sugar is dissolved, stirring constantly.
  • Remove from heat and puree in a blender or food processor.
  • Add Silk and vanilla, stirring to combine. Chill mixture for 1 hour.
  • Process in ice cream machine according to directions.
  • Add chocolate chips in during the last 5 minutes of processing.
  • Serve immediately or store in freezer. If freeing, place in refrigerator for 10 minutes before serving to soften.
