Ingredients

  • 2 large eggs
  • 3 cups Silk Dark Chocolate almondmilk
  • 3 Tbsp brown sugar
  • 2 Tbsp ground cinnamon
  • 1 tsp pure vanilla extract
  • Pinch of salt
  • 8 oz brioche or challah bread (about 8 1/2-inch slices), chopped into large pieces

    Yumm!

    We loved this. Very delicious flavor and not overly sweet as I find most bread puddings.

    twist on a great idea

    I add Chinese five spice powder and use brioche bread made with silk coconut instead of whole milk

    This recipe looks awesome! I can't wait to try it! Chocolate bread pudding is one of my favorite desserts. A little bourbon added would definitely be wonderful!

    Ok for a change

    We found this recipe to be 'ok' and an interesting twist. I'm sure most people would rate it higher than I am doing but I was born and raised in Louisiana and accustomed to what we feel is a far superior recipe. This recipe is far healthier and won't give you a buzz like ours will but bread pudding is one of the few things I am not willing to sacrifice flavor for healthy. My grandmother's recipe is just too knock-your-socks-off-good.

    I had made this bread pudding several months ago. It was DELICIOUS. My husband and I loved it. We love chocolate. I most probably will make this again when the weather gets cooler.

    Wonderful

    I made this and everyone in my home loved it we are a multi generation home a family of 8 ranging from 5months to 50 and nobody had a bad word to say I was proud as a peacock when I discovered this hidden gem thank you silk its so hard for me to find things everyone in our home enjoys deffinatly got 16 thumbs up from our little New Jersey home.

Chocolate Cinnamon Bread Pudding

Preparation

  • Preheat oven to 375°F.
  • In a large bowl, beat eggs and then add almondmilk, brown sugar, cinnamon, vanilla extract and salt, and whisk well.
  • Cut the bread into bite-sized pieces and place in an 8" x 8" nonstick casserole dish.
  • Pour the mixture slowly over the bread, ensuring you get it between all the pieces.
  • Cover with plastic wrap, refrigerate and soak for 30 minutes.
  • Bake 35-40 minutes, until set. Serve warm.
