Ingredients

  • 2 Tbsp vegetable oil
  • 2 garlic cloves, minced
  • 1 small jalapeño, seeded and finely minced
  • 1 Tbsp curry powder or 1 Tbsp red or green Thai curry paste
  • 2 cups vegetable broth
  • 14 oz (1 box) unsweetened coconut milk
  • 1 cup Silk Unsweetened Soy or Almondmilk
  • 1 tsp salt
  • 2 tsp freshly grated ginger
  • 1/2 lb rice vermicelli noodles
  • 1 block extra firm tofu, cut into 1/2-inch cubes
  • 2 small tomatoes, cored and cut into 1-inch chunks
  • 3 Tbsp fresh lime juice
  • 1/3 cup chopped fresh coriander
  • Asian chili oil to taste, if desired

    Delicious - will tweak next time for better taste!

    Made tonight and everyone loved it! I added a little more jalapeño and topped it off with freshly diced scallions. Sooo delicious. When I make again though I will use only a half box of tofu as I felt like it was too much tofu for the amount it made. I would also make more of the sauce - maybe add another half of the recipe for the liquids as it evaporated quite a bit while simmering. I would also add more garlic. The recipe is great just needs some tweaking!!!

    Allergy Free and LOVING IT! Thanks to SILK!

    Campbells love Curry !!

    Wow - what an exciting twist on a very healthy soup !! This is now a favorite in our household, and we have made it so many times that we "tweek" it to suit all our favorite tastes. We have left out the jalapeno which still made for a delicious soup. We have also substituted whole wheat spaghetti noodles for the vermicelli which made it even healthier. We are a family of curry fans so this is a real hit in our household. The coconut milk and almondmilk really made this a richer tasting soup than I expected. Of course the lime juice and ginger really give it a zing also !!! This is definitely a winner in our home, and I am sure we will keep it on top of our "go to" lists of quick and easy and healthy soups for all time !! Thank you !! We will also impress our guests with this recipe the next time we have company !!

    I've never seen a 14 oz. box of coconut milk, but a can works. I presume fresh coriander is what we call "cilantro". Anyway, this is a delicious soup!

    I would love to see some bruised lemongrass as part of this recipe; but, as it stands it is still an awesome dish! You can substitute chicken broth for the veggie broth for even more depth of flavor. And in the place of Silk Unsweetened Soy or Almond milk use Silk Coconut Milk instead. Doctor and play with it as you like and in the end you will be most pleased with this recipe, especially on a cold wintery day.

    Thai it you'll like it!

    This recipe is almost perfect. All it lacks is the addition of some Fish Sauce, which can easily be found at any Asian Market. Making as listed, plus adding fish sauce, to taste, is close enough to a Thai curry noodle dish no one would know. You could even add a little lemon grass for that extra something, something. So, Thai it . . . you'll like it!

    Wonderful recipe, but I substituted chicken for tofu

    I have not been able to develop a taste for tofu, so I cubed some left over chicken breast and substituted that for the tofu. Result was wonderful!

    amazing soup!

    We have a culinary theatre in the hotel I work at and we had a guest Thai chef who made a noodle bowl... I wanted to try one and I remembered this recipe... I used the almond milk and it turned out SO great! It was robust, flavorful and satisfying with the Silk adding a velvety creaminess to broth!!! I LOVE this recipe and will use it again!

    A Comforting Favorite

    LOVE coconut curries! This one is pretty easy, despite all the ingredients. Once you make dishes like this more than once, they become far less complicated. I tend to turn the spice level up on everything, so I used a serrano as well as a jalapeno. I also garnish with lime wedges and will occasionally add pineapple chunks. Yum!

    Nice thai flavor!

    I made this for dinner today and it was a hit!! I had never thought of using Silk products in curries, but it turned out great! I added some cayenne powder for more heat and subbed Kaffir lime leaves for lime juice. I think some fresh Thai basil would also go great with this recipe. My boyfriend absolutely loved it! :)

    Exotic addition

    Absolute wonderful recipe and I kicked it up a notch by adding 1/2 cup chopped galangal root, 1/2 cup chopped lemon grass and kaffir lime leaves (torn in half about 6 leaves) in the broth mix which really made the flavor exotic! The fragrant while it is simmering is amazing!

    Easy to make lowfat!

    This is a great recipe with authentic Thai flavors. I follow a lowfat diet and it was easy to saute the veggies in a bit of broth instead of the oil and follow the rest of the recipe for a fantastic lowfat vegan meal!

    minor adjustment but otherwise delish!

    I put in the coconut milk at the very end, and only have it in there long enough for it to be warmed up, the longer you cook coconut milk, the less coconut-y it becomes.

    A symphony of flavor.

    Yum! We didn't core the tomatoes (the pic looks like they didn't either) and we subbed coconut oil for the veg oil and we used the Silk coconut original instead of almond bc we are totally addicted to it. Yum!

    Great Coconut and Curry Flavor

    This rivals anything that you could buy at a Thai restaurant. I loved how rich and creamy (but still light) this dish was. Also, the green curry was just the right amount of spice and flavor without being too heavy.

    So warm & satisfying!

    My whole family loves this recipe! I just cut my tofu smaller. It's helpful to know that Coriander is the same thing as Cilantro... I had to look that one up. You could also use Basil, which I will try next time. Also, I added snow peas to mine.

    Finally! A Healthy soup for the whole Family!

    Finally a soup for everyone! There is nothing in this recipe that isn't healthy; no compromise I have to make and I'm so grateful for that. The fact that it's vegetarian is so comforting; we have two in our family and this soup makes everyone happy now!

Coconut Curry Noodle Bowl

Preparation

  • In a heavy saucepan heat the vegetable oil over moderately low heat and cook garlic and jalapeño, stirring, for 2-3 minutes until fragrant.
  • Add the curry powder (or paste) and cook, stirring constantly, for 30 seconds.
  • Stir in the broth, coconut milk, Silk, salt and ginger and bring mixture to a boil. Lower heat and simmer for 10 minutes.
  • While the soup is simmering, place noodles in a large bowl, cover with warm water and let sit for 5 minutes. Meanwhile, bring a large pot of salted water to a boil.
  • Add noodles and cook for 5 minutes.
  • Pour noodles into a colander, rinse under cold water, and drain well.
  • Once soup has simmered, add tofu, tomatoes and lime juice. Cook over moderate heat, stirring, until soup is hot.
  • Divide the noodles among four bowls and ladle the soup over noodles. Sprinkle each serving with chopped coriander and drizzle with chili oil, if desired.
