Ingredients

For salad

  • 1 (12-oz) bag broccoli or traditional slaw mix
  • 4 green onions, sliced
  • 1 tsp freshly grated ginger
  • 1 medium red pepper, cut in julienne

For dressing

  • 1/4 cup Silk Unsweetened or Original Soy or Almondmilk
  • 2 Tbsp mayonnaise or veganaise
  • 1 tsp freshly grated ginger
  • 1/2 tsp toasted sesame oil
  • 1 Tbsp vegetable oil
  • 2 Tbsp cilantro, roughly chopped
  • 1 Tbsp rice or cider vinegar
  • 1 Tbsp soy sauce

    Great Salad

    The salad went well with the Vegetarian Coconut curry also from this site. A great salad to try!

    Deliciously Different Slaw

    This is a great use for slaw mix! I used Silk almond milk which added a slightly nutty flavor and topped mine with additional sliced, toasted almonds. Thanks for the recipe!

Preparation

  • Combine slaw and vegetables in a bowl.
  • In a separate bowl, whisk together dressing ingredients.
  • Add dressing to slaw and let sit for 15 minutes before serving.
