Ingredients

  • 1 Tbsp olive oil
  • 1/2 cup chopped onion
  • 1 clove garlic, minced
  • 1 tsp freshly grated ginger
  • 1 Tbsp curry powder, to taste
  • 2 1/2 cups Silk Cashewmilk
  • 1/2 cup roasted, salted cashews, plus additional for garnish
  • 4 cups chopped veggies (cauliflower, green beans, broccoli, etc.)
  • Salt, to taste
  • 2 cups rice, prepared according to directions on package

    Bland but has potential

    I found this was lacking some flavour but it has a great base. I'm going to experiment with some spices.

    Good starting point

    This recipe is a good starting point. A couple modifications I'd recommend are either adding sweet potatoes as one of your veggies. Second, I'd pair the curry spice with some turmeric, probably half as much compared to the curry or maybe even less depending on your tastes. If you want some heat add some cayenne to the mix. Finally, when serving I've added a couple squirts of lime juice to the bowl and some cilantro on top (or mixed in if you use the freeze dried stuff).

    Tweak it to your taste!

    As another review suggested, I added turmeric to the sauce along with the curry. I also added black pepper and a bit of cayenne to give it a kick. Lime juice on top was AWESOME. Overall, I loved how creamy the sauce turned out with cashew milk! Everyone in the house loved it.

Creamy Cashew Curry

Preparation

  • Sauté onion, garlic & ginger in olive oil for 5 minutes.
  • Add curry powder and Silk, mixing well. Simmer for 5 minutes.
  • Finely grind cashews in blender or food processor. Add to Silk mixture along with veggies.
  • Cover & simmer until veggies are tender, about 7-10 minutes.
  • Salt to taste. Serve over rice with additional cashews.
