Ingredients

Cauliflower

  • 2 Tbsp coconut oil, melted 
  • 1 Tbsp garam masala or curry powder
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1 large head cauliflower, broken into florets

Quinoa

  • 1 Tbsp coconut oil
  • 1 clove garlic
  • 1/2 cup chopped onion
  • 1 cup quinoa
  • 2 cups Silk Unsweetened Coconutmilk
  • 1 1/2 tsp curry powder
  • 1/2 tsp salt
  • 1 cup fresh or frozen peas
  • Toasted coconut flakes, for garnish

    It's a keeper!

    I made a couple changes. I added petite green lentils with the quinoa and also roasted a head of garlic while the cauliflower was roasting. I added the roasted garlic to the quinoa and lentils.

    Family Loved it!!

    I added a table spoon of Red Pepper Flakes for a little kick, which was actually a little too spicy for me, but my husband loved it. Kids had it with no spice. I also added a few other vegetables. The Quinoa came out light an fluffy. It was a great dinner dish with naan.

    Taste Bud Approved

    Talk about delicious! The sweetened coconut milk brands make me a bit ill however this, this was golden ( literally golden at the end). All the spices hit the Indian curry nail on it's head! I have made curry many times before but had to use alts for the coconut milk because I couldn't stand the taste or overly-rich consistency. MANY enthusiastically expressed thanks to you Silk <3

    Worth making again

    My family enjoyed this dish. It has a nice blend of flavors and textures and I will probably be making it again. I did not add the toasted coconut flakes.

    Wonderful flavor and textures.

    I've made this recipe twice now and will make it many more times. Everyone in my family loves this. The only thing I do different is leave out the toasted coconut flakes garnish. My family loves the coconut flavor but not the feel of toasted coconut in their mouths.

Curried Quinoa Veggie Bowl

Preparation

  • Preheat oven to 450°F.
  • Whisk together melted coconut oil, garam masala, cumin and salt in a large bowl. Add cauliflower and toss until well coated.
  • Arrange on a baking sheet and bake until tender, about 35 minutes.
  • Meanwhile, melt 1 Tbsp coconut oil in a medium saucepan over medium heat.
  • Add garlic and onion and sauté for 5 minutes, until transparent.
  • Add quinoa and cook for another 5 minutes, stirring often.
  • Add Silk, curry powder and salt, bringing mixture to a boil.
  • Reduce heat to a simmer, cover and cook for 20 minutes.
  • Remove from heat and stir in peas.
  • Spoon into bowls and top with roasted cauliflower and toasted coconut, if desired.
