  • 1 1/2 cups (3 sticks) margarine
  • 1 1/2 cup sugar
  • 3/4 cup dark brown sugar
  • 1 1/2 Tbsp egg substitute
  • 3 tsp maple extract
  • 4 cups flour
  • 1/2  tsp salt
  • 1/2  tsp baking powder


  • 1 cup unsalted margarine
  • 3 cups powdered sugar
  • 1/2 tsp salt
  • 1 1/2 tsp maple extract
  • 2 Tbsp maple syrup
  • 3 Tbsp Silk Vanilla Almond Coffee Creamer

  • Prepare cookies
  • Preheat oven to 350°F. Grease two cookie sheets.
  • In a large bowl, cream margarine and sugars. Add egg substitute and maple extract and mix until well blended.
  • Sift together flour, salt and baking powder. Stir into creamed sugar mixture until well blended.
  • Roll out dough to 1/8” over a floured surface and cut out with maple leaf cookie cutter. Place on cookie sheets about 2 inches apart.
  • Bake for 8 minutes, then let cool on wire rack.
  • Prepare filling
  • Blend all filling ingredients except Silk on low, then whisk on medium for two minutes. Add Silk little by little, whisking to incorporate.
  • Spread the bottom of half the cookies with filling and top with remaining cookies.
