  • 3/4 cup dark brown sugar
  • 4 Tbsp margarine (or butter)
  • 3 1/2 cups Silk Vanilla Cashewmilk, divided
  • 1 tsp salt
  • 1/4 cup cornstarch
  • 1 Tbsp vanilla
  • Flaked sea salt, for garnish

    YUM!

    I'm exploring the new, exciting, and nerve wracking lifestyle of non-dairy and wheat free, clean eating diet. Tried this recipe! LOVE IT! Here's the thing, the writer forgets to mention when to put in the vanilla extract. However, I just placed it into step 3. Overall, never made "from scratch pudding." I can't wait to give some for my Dad to try.

    This pudding is marvelous! I love the flavor combination. I used coconut palm sugar instead of brown, and grass-fed butter and sea salt instead of table salt. Can't wait to serve it to my family tonight!

    Good flavor never reached pudding consistency

    More like a sauce than a pudding. As others noted, when to add the vanilla was not mentioned so added with the cornstarch mixture. Could that be the problem?

Salted Caramel Pudding

Preparation

  • Combine brown sugar, margarine, 1/2 cup Silk and salt in a saucepan. Bring to a boil, reduce heat to low and simmer for 8 minutes, stirring occasionally.
  • Whisk cornstarch together with another 1/2 cup of Silk. Add cornstarch Silk mixture and remaining 2 1/2 cups of Silk to the brown sugar mixture.
  • Return to a boil, reduce heat and simmer for 5 minutes, stirring constantly, until pudding thickens.
  • To serve, sprinkle with flaked sea salt.
