Ingredients

  • 10 eggs
  • 1/2 cup Silk Original Unsweetened Almondmilk
  • Salt and pepper to taste
  • 2 Tbsp olive oil
  • 1/2 yellow onion, diced
  • 1/2 red pepper, diced
  • 1/2 green pepper, diced
  • 2 small cloves garlic, minced
  • 1 lb breakfast sausage or 1 lb extra firm tofu
  • 3 cups spinach

    Great breakfast

    I wasn't sure that almond milk would be good in a breakfast recipe, but this was great! I will be using almond milk more in many of my recipes!

    Delicious and Simple!!!

    LOVE this quiche. I used bacon instead of sausage and it was delicious. The spices give it a perfect flavor. Great for a quick breakfast or even have it for lunch!

    No Moo Quiche

    My wife and I just finished the last of this delicious quiche....absolutely fantastic! We used turkey meatballs and a few pieces of bacon instead of sausage and it turned out just as good as the original or maybe better! Thanks Silk, keep up the great No Moo alternatives. Tony & MJ

    Delicious

    This is a breakfast favorite. We buy lots of unsweetened almond milk and it's great to have a new recipe for breakfast. I made mine with sausage.

    I made this quiche and it was very good... The almond milk was a surprise as I was not sure about adding it but, it works. The next time I make it I will use turkey sausage instead. I used pork and it was way too oily for me. Overall a good recipe

    Breakfast Club winner

    I made this for our monthly ladies breakfast club and everyone just raved about it. When I told them it had Silk Almond milk in it they could not believe it. I will be making this again.

    Quiche-a-Liscious

    I made this recipe using turkey sausage and it works well with all the Silk Milks! Make life easier by buying a bag of Sofrito(onions and green and red peppers ) in your frozen food section. This makes a great quiche,but you can also make a yummy omelette by simply cutting back on ingredients. I will continue to be Silk-a-delicious, for all my future meals.

Sausage and Pepper Crustless Quiche

Preparation

  • Preheat oven to 350°F and lightly grease a glass 13" x 9" glass pan. Set aside.
  • In a large bowl, whisk together eggs, almondmilk, salt and pepper. Set aside.
  • In a large skillet, heat olive oil over medium-high heat. Add onions and sauté until barely transculent, about 5-7 minutes.
  • Add diced peppers and sauté another 3-5 minutes, until softened. Add garlic and sauté 1 additional minute, until just fragrant.
  • Add sausage and continue cooking until sausage is browned and cooked through. Alternately, add tofu and continue cooking until tofu is lightly browned.  Add spinach and toss gently for 2-3 minutes, until barely wilted.
  • Pour sausage (or tofu) mixture into prepared glass pan. Pour egg mixture over the top and gently spread to ensure everything is distributed evenly.
  • Bake for 25-30 minutes until eggs are set. Let cool for 5 minutes, then slice.
