Ingredients

  • 1 cup quinoa
  • 2 cups Silk Organic Unsweetened Soymilk
  • 1 (15-ounce) can black beans, drained and rinsed
  • 5 scallions, chopped
  • 1 large tomato, chopped
  • 1/4 cup olive oil
  • 1/4 cup chopped fresh cilantro
  • 2 tsp cumin
  • Juice of 1 fresh lime
  • Salt and pepper, to taste

    Your spice rack will improve this greatly

    I used red quinoa and almond milk instead of soy. As is, the recipe is a bit bland, so I added garlic and some chili powder, then topped with spicy pepitas... which made it much better. Added cubed chicken to leftovers and rolled it up in flat outs with fresh avocado as my "mayo".

    Quazy for Quinoa

    I love this dish. Suupper filling and full of goodness. I added roasted corn and topped with a spoonful of pepper jelly...wow factor. The avocado makes it. Almond milk added nuttiness to the quinoa as well.

    We love this recipe. Being vegan I eliminated the olive oil. We add frozen corn and some chopped roasted red peppers. Delicious!!

    Perfect for lunch or as a side.

    Absolutely loved this recipe. I eat a lot of quinoa and always looking for different recipes. Like the added black beans for more protein. I made this and had it for lunch and had enough left over to have for a side with my wasabi/macadamia encrusted cod. I found the flavor very pleasing and so did my family. Will be making this quite often. Love the fresh taste of the lime and cilantro combined.

    Eat Healthy Feel Good

    I love this recipe for quinoa. Its easy to prepare and easy to adjust to your own taste. If you need more spice just add it. Its very adaptable to your own likes. And its good for you! Thanks Silk! More please!

Southwest Quinoa Bowl

Preparation

  • In a saucepan, add quinoa and Silk. Bring to a boil.
  • Reduce to medium-low heat, cover and cook for 10-12 minutes until Silk is absorbed. Remove from heat.
  • Add black beans, scallions and tomato to the quinoa.
  • Mix in olive oil, cilantro, cumin and lime juice, stirring thoroughly.
  • Add salt and pepper to taste.
  • Serve warm or store in fridge and serve cold.
