Ingredients

  • 1 cup of uncooked elbow macaroni 
  • 1 cup Silk Unsweetened Original Almondmilk
  • 6 Tbsp nutritional yeast
  • 1 tsp minced garlic
  • 2 tsp Dijon mustard
  • 1 cup pumpkin purée (not pumpkin pie filling)
  • Salt and pepper to taste

    not your grandma's

    I'm a huge mac and cheese fan but not really a pumpkin fan. While the pumpkin flavor is there, it's too much of a stretch to taste like cheese. It has the right color and has a thick consistency. I like that I can chow down guilt-free. In order to help trick my taste buds, I had to slather it with ketchup on top. since i sometimes do that with the blue box stuff. Overall, not bad for vegan, but since I'm not vegan, I'm going to add a bit of cheddar cheese at the end with some ketchup on top.

    Yummy!

    I never would have thought of having pumpkin in my mac n cheese. But since I love mac n cheese and it is getting to be fall, I thought why not give it a try! Good choice! This was amazing!!!

    Thank you for making a recipe that is easy for a college student to make and one that brings back a bit of home while away at school. The pumpkin is perfect for this time of year and adds just the right touch of fall!

    I am vegetarian and love to explore vegan options as well. I had some original unsweetened almond milk in my fridge and decided to give this recipe a try. I love pumpkin but at first I was skeptical about it in mac n' cheese, but it was so yummy! Love this vegan comfort food!

    Pumpkin Mac N Cheese!

    This is absolutely delicious! Everyone knows how difficult it is to get a four year old to not be such a picky eater. Not to mention trying to get him to eat a Vegan friendly meal. My son loved this and it was easy to prepare. I highly recommend this meal :)!

    SO GOOD!!!

    I love love LOVE being able to substitute healthy ingredients for less-than-stellar choices such as cheese and cow's milk. My kiddos gobbled this up and asked for seconds! (Unprecedented in our house with a 3 and 5-year-old) I will DEFINITELY be making this again!

    Looks like mac & cheese, but unique taste

    I don't think the pumpkin taste is overwhelming. If someone else made it and I was to try it, I don't even think I'd guess there was pumpkin in it. It has an alright taste, but not good enough for me to make it again. This was a waste of some great ingredients, like the Silk milk and nutritional yeast. There's other vegan cheese recipes that make some much better tasting sauces that taste more like cheese. This one just appealed to me because it's less work and clean-up. Most of my other vegan cheese recipes involve nuts and the use of a blender. I guess mentally I was disappointed too because it looks so much like cheezy mac, but tasted nothing like it.

    Best ever!

    I made this with plain silk light (allergy to almonds, dairy, eggs) It was the best mac and cheeze ever!

    You will be very surprised and happy!!

    I saw the title for this one and was like hhhmmm not sure about this one....but I was very surprised. It actually is really good and I am an avid Mac 'n Cheese eater. So next time you see a recipe that throws you for a loop....just try it!!

    You can't go wrong with pumpkin!

    I LOVE LOVE LOVE pumpkin and I am always missing it in the summer time. This recipe was a great way for me to get some more pumpkin in my life and my one year old loved it! Not only was I able to make a delicious comfort food, but I was able to combine one of my favorite flavors with it. As my one year old would say 'Yum Yum in my Tum'!

    Good but doesn't taste cheesy

    First off, we are not vegan so my score is lower than that of a vegan I'm sure. We found it to be good but lacked any wow factor. None of us thought it was a cheese replacement in terms of flavor. It has a close appearance but simply falls far short in comparison to real cheese. If you are used to boxed mac and cheese, then you will likely find this to taste just as good but different and interesting.

    Not Mine Until Now!!

    So at first very skeptical... pumpkin in mac and cheese?? I don't think so!! It was actually very good! I usually make my own but I also use ketchup and parmesan as my personal topper ( but I left it off)!! This was very thick yet still creamy and we all like pumpkin and enjoy almond milk the dijon gave it that little kick. The almond milk gives it that little hint of something that makes you go hmmmmm!! Overall pretty good recipe...now going to try some more!

    As a facilitator of a fitness group I search daily for recipes to share. It is a real treat, especially in the Fall with the abundance of pumpkins in the supermarkets. This one is a winner!

    So Delicious

    I'm a huge fan of pasta dishes and love that this one is so flavorful and completely vegan. This pasta tastes amazing and is healthier than other macaroni and cheese dishes. This is comfort in every bite and tastes amazing.

Vegan Pumpkin Mac and Cheeze

Preparation

  • Cook pasta according to package directions and set aside until ready to use.
  • Meanwhile, bring almondmilk to a boil in a pot over medium-high heat.
  • Whisk in nutritional yeast, minced garlic and Dijon mustard, and continue to cook for 2 minutes or until slightly thickened.
  • Whisk in pumpkin purée until completely smooth and cook until desired consistency is reached. Add salt and pepper to taste.
  • Stir in cooked pasta until the sauce is evenly distributed.
  • Transfer to plates and serve.
