Avocado-Grapefruit Salad With Creamy Onion Dressing

This silken dressing is delicious on a variety of salads!

Ingredients

Dressing

  • 1 Small Sweet Onion, Chopped
  • 3 Tbsp silk Original Soymilk, almondmilk, Or oatmilk
  • 1 Tbsp Canola Oil
  • 1/4 Cup Sugar
  • 3 Tbsp Vinegar
  • 1/2 Tsp Dry Mustard
  • 1/2 Tsp Whole Celery Seed
  • 1/4 Tsp Garlic Powder
  • 1/2 Tsp Salt
  • 1/2 Tsp Black Pepper

Salad

  • 2 Heads Bibb Lettuce
  • 2 Avocados, Halved, Peeled, Thinly Sliced
  • 2 Grapefruit With Peel And Pith Removed, Cut Into Sections
  • 1/4 Cup Sliced Almonds, Toasted, If Desired, Salt And Freshly Ground Pepper, To Taste

Directions

Prepare dressing

  • Step 1

    Bring 2 cups of water to a boil in a small saucepan.
  • Step 2

    Add onion and simmer for 5 minutes (this increases the onion’s sweetness).
  • Step 3

    Drain onions in a colander, cool for 5 minutes and place in a blender.
  • Step 4

    Add remaining dressing ingredients and blend until smooth, about 3 minutes.
  • Step 5

    Chill. Makes 1 cup.

Prepare salad

  • Step 1

    Arrange lettuce leaves on 4 plates, drizzle with 2 tablespoons dressing, and arrange avocado slices, grapefruit and almonds on top.
