Ingredients
- 1 Tbsp Margarine, Butter Or Coconut Oil
- 4 Ripe Bananas
- 1/2 Cup Packed Brown Sugar Or Coconut Sugar
- 2 Cups silk Cashewmilk Or coconutmilk
- 1 Tsp Vanilla Extract
- 3/4 Cup Mini Chocolate Chips Or Toasted Pecans, Optional
Directions

Step 1
Melt margarine in a large nonstick saute pan over medium heat. -
Step 2
Peel and cut bananas lengthwise. -
Step 3
Place bananas, cut side down, in hot pan and sear for 1 minute. Turn bananas over and sear the other side. -
Step 4
Cook for another 5 minutes, stirring (bananas will start to fall apart). -
Step 5
Add brown sugar and cook until sugar is dissolved, stirring constantly. -
Step 6
Remove from heat and puree in a blender or food processor. -
Step 7
Add Silk and vanilla, stirring to combine. Chill mixture for 1 hour. -
Step 8
Process in ice cream machine according to directions. -
Step 9
Add chocolate chips in during the last 5 minutes of processing. -
Step 10
Serve immediately or store in freezer. If freezing, place in refrigerator for 10 minutes before serving to soften.
