Caramelized Banana Ice Cream

preparation

  1. Melt margarine in a large nonstick saute pan over medium heat.
  2. Peel and cut bananas lengthwise.
  3. Place bananas, cut side down, in hot pan and sear for 1 minute. Turn bananas over and sear the other side.
  4. Cook for another 5 minutes, stirring (bananas will start to fall apart).
  5. Add brown sugar and cook until sugar is dissolved, stirring constantly.
  6. Remove from heat and puree in a blender or food processor.
  7. Add Silk and vanilla, stirring to combine. Chill mixture for 1 hour.
  8. Process in ice cream machine according to directions.
  9. Add chocolate chips in during the last 5 minutes of processing.
  10. Serve immediately or store in freezer. If freezing, place in refrigerator for 10 minutes before serving to soften.

  • 1 Tbsp margarine, butter or coconut oil

  • 4 ripe bananas

  • 1/2 cup packed brown sugar or coconut sugar

  • 2 CUPS SILK CASHEWMILK OR COCONUTMILK

  • 1 tsp vanilla extract

  • 3/4 cup mini chocolate chips or toasted pecans, optional
