Coconut Macaroons

Gluten-free, vegan and one of the best macaroons we’ve ever tasted.

preparation

  1. Preheat oven to 350°F.
  2. Combine Silk, brown rice syrup and cornstarch in a saucepan over low heat. Stir until thickened, about 2-3 minutes.
  3. Add vanilla, salt and coconut, stirring until well combined.
  4. Drop by rounded teaspoons onto baking sheet lined with parchment paper.
  5. Bake for 20-25 minutes or until golden brown.

Ingredients

  • 1/2 cup Silk UNSWEET COCONUTMILK

  • 1 Tbsp brown rice syrup or agave

  • 1 Tbsp organic cornstarch or arrowroot

  • 2 tsp vanilla extract

  • 1/4 tsp salt

  • 3 cups shredded coconut
