Coconut Mango Sticky Rice

Ingredients

  • 3 Cups Glutinous Rice
  • 2 Cups Silk Unsweet Or Original Coconutmilk
  • 3/4 Cup Cane Sugar Or Brown Sugar
  • 1 Tsp Salt
  • 4 Ripe Mangoes
  • Mint And Toasted Coconut, For Garnish
  • Peel And Slice Mangoes.
  • To Serve, Place A Mound Of Sticky Rice On Each Plate With Sliced Mango. Top With Additional Sweet Coconutmilk, Mint, And Toasted Coconut As Desired.

Directions

  • Step 1

    Soak sticky rice at least 4 hours (or overnight) in water.
  • Step 2

    Drain sticky rice, then steam until tender.
  • Step 3

    While rice steams, place coconutmilk in a pot over medium heat until hot (not boiling). Add sugar and salt and stir to dissolve.
  • Step 4

    When the sticky rice is tender, place into a bowl and pour 1 cup of the hot coconutmilk over it; save the rest. Stir to mix the liquid into the rice.
