Coconut Mango Sticky Rice

preparation

  1. Soak sticky rice at least 4 hours (or overnight) in water.
  2. Drain sticky rice, then steam until tender.
  3. While rice steams, place coconutmilk in a pot over medium heat until hot (not boiling). Add sugar and salt and stir to dissolve.
  4. When the sticky rice is tender, place into a bowl and pour 1 cup of the hot coconutmilk over it; save the rest. Stir to mix the liquid into the rice.

Ingredients

  • 3 CUPS GLUTINOUS RICE

  • 2 CUPS SILK UNSWEET OR ORIGINAL COCONUTMILK

  • 3/4 CUP CANE SUGAR OR BROWN SUGAR

  • 1 TSP SALT

  • 4 RIPE MANGOES

  • MINT AND TOASTED COCONUT, FOR GARNISH

  • Peel and slice mangoes.

  • To serve, place a mound of sticky rice on each plate with sliced mango. Top with additional sweet coconutmilk, mint, and toasted coconut as desired.
