Morning Glory Muffins

Apples, coconut, raisins, pecans and carrots offer a delicious way to start the day.

Ingredients

  • 1 Cup All-purpose Flour
  • 1 Cup Whole-wheat Flour
  • 1/2 Cup Brown Sugar
  • 1/4 Cup Granulated Sugar
  • 2 Tsp Baking Soda
  • 2 Tsp Ground Cinnamon
  • 1/4 Tsp Salt
  • 3/4 Cup silk Soymilk, almondmilk, oatmilk, Or coconutmilk, Any Flavor Except Chocolate
  • 1/2 Cup Vegetable Or Canola Oil
  • 1/2 Cup Unsweetened Applesauce
  • 2 Tsp Vanilla Extract
  • 1 Granny Smith Apple, Peeled And Chopped
  • 1/2 Cup Shredded Coconut
  • 1/2 Cup Raisins
  • 1 Cup Grated Carrots
  • 1/2 Cup Chopped Pecans

Directions

  • Step 1

    Preheat oven to 350°F.
  • Step 2

    Line muffin tins with paper liners.
  • Step 3

    In a medium bowl whisk together flours, sugars, baking soda, cinnamon and salt.
  • Step 4

    In a large bowl whisk together Silk, oil, applesauce and vanilla.
  • Step 5

    Stir in the apple, coconut, raisins and carrots.
  • Step 6

    Add flour mixture and stir just until moistened there will be a few lumps.
  • Step 7

    Spoon the batter into muffin cups, filling each cup about 3/4 full.
  • Step 8

    Sprinkle with chopped pecans and bake until tops spring back, about 30-35 minutes.
  • Step 9

    Store, tightly covered, at room temperature for 3 to 5 days, or freeze.
