Ingredients
- 1 Cup All-purpose Flour
- 1 Cup Whole-wheat Flour
- 1/2 Cup Brown Sugar
- 1/4 Cup Granulated Sugar
- 2 Tsp Baking Soda
- 2 Tsp Ground Cinnamon
- 1/4 Tsp Salt
- 3/4 Cup silk Soymilk, almondmilk, oatmilk, Or coconutmilk, Any Flavor Except Chocolate
- 1/2 Cup Vegetable Or Canola Oil
- 1/2 Cup Unsweetened Applesauce
- 2 Tsp Vanilla Extract
- 1 Granny Smith Apple, Peeled And Chopped
- 1/2 Cup Shredded Coconut
- 1/2 Cup Raisins
- 1 Cup Grated Carrots
- 1/2 Cup Chopped Pecans

Step 1
Preheat oven to 350°F. -
Step 2
Line muffin tins with paper liners. -
Step 3
In a medium bowl whisk together flours, sugars, baking soda, cinnamon and salt. -
Step 4
In a large bowl whisk together Silk, oil, applesauce and vanilla. -
Step 5
Stir in the apple, coconut, raisins and carrots. -
Step 6
Add flour mixture and stir just until moistened there will be a few lumps. -
Step 7
Spoon the batter into muffin cups, filling each cup about 3/4 full. -
Step 8
Sprinkle with chopped pecans and bake until tops spring back, about 30-35 minutes. -
Step 9
Store, tightly covered, at room temperature for 3 to 5 days, or freeze.
