Pesto Noodles

This quick and easy dinner is sure to please the entire family.

Ingredients

  • 16 Oz Whole Wheat Noodles (Fettuccine Or Linguine)
  • 1 Tbsp Vegan Butter Or Margarine
  • 1 Onion
  • 2 Bell Peppers, Finely Chopped
  • 1 Cup silk Unsweet Almondmilk
  • 1/2 Cup Vegan Prepared Pesto
  • Salt To Taste
  • 1/4 Cup Dairy-free Parmesan

Directions

  • Step 1

    Cook noodles as directed.
  • Step 2

    In a small saucepan, melt margarine (or butter) over medium-high heat. Add onion and cook until translucent.
  • Step 3

    Add bell peppers to onions and cook for approximately 4 minutes.
  • Step 4

    Whisk in almondmilk and heat until bubbly.
  • Step 5

    Add in pesto and salt.
  • Step 6

    Remove pasta from heat, drain and toss with sauce.
  • Step 7

    Serve with fresh Parmesan, if desired.
