Pesto Noodles

This quick and easy dinner is sure to please the entire family.

preparation

  1. Cook noodles as directed.
  2. In a small saucepan, melt margarine (or butter) over medium-high heat. Add onion and cook until translucent.
  3. Add bell peppers to onions and cook for approximately 4 minutes.
  4. Whisk in almondmilk and heat until bubbly.
  5. Add in pesto and salt.
  6. Remove pasta from heat, drain and toss with sauce.
  7. Serve with fresh Parmesan, if desired.

Ingredients

  • 16 oz whole wheat noodles (fettuccine or linguine)

  • 1 TBSP VEGAN BUTTER OR MARGARINE

  • 1 onion

  • 2 bell peppers, finely chopped

  • 1 CUP SILK UNSWEET ALMONDMILK

  • 1/2 CUP VEGAN PREPARED PESTO

  • SALT TO TASTE

  • 1/4 CUP DAIRY-FREE PARMESAN
