Spinach Artichoke Dip

Ingredients

  • 3 Tbsp Margarine (Or Butter)
  • 4 Tbsp Flour
  • 2 Cups silk Original Soymilk, organic Unsweet Soymilk Or unsweet Almondmilk, Warmed
  • 1/2 Tsp Salt
  • 1/4 Tsp Cayenne Pepper
  • 1/4 Tsp Pepper
  • 1-2 Garlic Cloves, To Taste
  • 2 14 Oz Cans Artichoke Hearts, Well Drained
  • 1 10 Oz Package Frozen Chopped Spinach, Thawed And Drained
  • 1/3 Cup Grated Soy Or dairy-Free Parmesan Cheese
  • Fresh Vegetables Or Chips, For Serving

Directions

  • Step 1

    Preheat oven to 350°F.
  • Step 2

    Lightly coat a 2-quart baking pan with cooking spray.
  • Step 3

    Melt margarine (or butter) in a saucepan over medium heat.
  • Step 4

    Whisk in flour and cook for 2 minutes. Slowly whisk in warm soymilk. Add salt, cayenne and pepper and cook until very thick, about 5-7 minutes.
  • Step 5

    Remove from heat.
  • Step 6

    Place garlic, artichoke hearts and spinach in a food processor or blender and process until smooth.
  • Step 7

    Stir spinach mixture into soymilk mixture.
  • Step 8

    Spread dip in prepared pan and sprinkle with Parmesan.
  • Step 9

    Bake for 20-25 minutes until heated through and bubbly.
