Spinach Artichoke Dip

preparation

  1. Preheat oven to 350°F.
  2. Lightly coat a 2-quart baking pan with cooking spray.
  3. Melt margarine (or butter) in a saucepan over medium heat.
  4. Whisk in flour and cook for 2 minutes. Slowly whisk in warm soymilk. Add salt, cayenne and pepper and cook until very thick, about 5-7 minutes.
  5. Remove from heat.
  6. Place garlic, artichoke hearts and spinach in a food processor or blender and process until smooth.
  7. Stir spinach mixture into soymilk mixture.
  8. Spread dip in prepared pan and sprinkle with Parmesan.
  9. Bake for 20-25 minutes until heated through and bubbly.

Ingredients

  • 3 Tbsp margarine (or butter)

  • 4 Tbsp flour

  • 2 CUPS SILK ORIGINAL SOYMILK, ORGANIC UNSWEET SOYMILK OR UNSWEET ALMONDMILK, WARMED

  • 1/2 tsp salt

  • 1/4 tsp cayenne pepper

  • 1/4 tsp pepper

  • 1-2 garlic cloves, to taste

  • 2 14 oz cans artichoke hearts, well drained

  • 1 10 oz package frozen chopped spinach, thawed and drained

  • 1/3 CUP GRATED SOY OR DAIRY-FREE PARMESAN CHEESE

  • FRESH VEGETABLES OR CHIPS, FOR SERVING
